Relæ is the neighborhood joint everyone wants nearby. The brainchild of Noma alumni Christian Puglisi and Jonathan Tam, it’s a former regular on the World’s 50 Best list. Set in the hip, creative Nørrebro neighborhood, it swerves fussy fine-dining tropes in favor of cool aesthetics and convivial staff. Guests pour the wine and plunder silverware from drawers that slink from the table as they dine. The cooking, meanwhile, is as cutting edge as it gets. Informed, but not restricted, by the New Nordic model, deceptively simple plates push the limits of flavor. Think pork with elm shoots and an XO sauce derived from charcuterie.
